Vinification

The 2019 grapes were harvested manually between mid-September and the first ten days of October. Bunches underwent an initial selection in the vineyard, followed by destemming and a second selection of the berries on a sorting table. Fermentation lasted approximately 10 days in stainless-steel tanks at a controlled temperature no higher than 28°C. The wine then remained on the skins for a further 15 days. Drawing off was followed by malolactic fermentation.

Ageing

The wine matured for at least 24 months in 25 hl French oak barrels and, in part, 65 hl Slavonian oak barrels. It was bottled during the third year and completed its maturation in a temperature-controlled warehouse before release.

Technical data

Production comprised 4,000 bottles. Alcohol is 14%, total acidity 5.2 g/L and net dry extract 30.90 g/L. The 2019 technical sheet gives a pH of 3.36, while the wine page reports 3.52.

Tasting profile

The general profile is an intense ruby red wine with aromas of black cherry and slate. It is medium-bodied, with juicy tannins, a savory finish and a firm balance between fruit and tannic structure.

For the 2019 vintage, the color is ruby red with lively highlights. The bouquet is floral and assertive, combining black cherry, wild rose and tobacco. The palate is decisive and vibrant, ending with an enveloping, savory finish. The wine needs another three to four years to express its potential fully.

Vintage notes

The 2019 growing season was generally regular. Winter brought occasional, relatively light rainfall and temperatures ranging from around 0°C to 10°C. A wetter spring replenished soil-water reserves ahead of summer, while rising temperatures encouraged budbreak at the appropriate time. A hot summer, punctuated by some rainfall, supported steady vine development and gradual, even ripening. Harvest ran from mid-September through the first ten days of October.
