After harvest, the grapes are carefully sorted and dried naturally in the warm autumn sun. They are then gently pressed and undergo a long cold maceration before fermentation at low temperature.

During its first year in bottle, the wine has a fresh aroma and flavour. With time, this freshness develops into more mature characteristics.
