Vineyard and terroir

The grapes come from old vines in the Is Crabilis vineyard, at around 180 m above sea level. The soils are sandy and limestone-clay with a high proportion of pebbles, which give the wine freshness, minerality and a fuller texture.

Vinification

The grapes are picked at optimal ripeness. After gentle pressing, fermentation takes place with native yeasts in stainless-steel tanks at a low temperature, to preserve the clean aromas of the Vermentino.

Ageing

The wine spends 6 months on its lees, which rounds out the texture and adds depth.

Tasting profile

Expressive and elegant, combining freshness and a smooth texture with Mediterranean character. Ripe pear, dried apple and wild herbs unfold gradually, supported by lively acidity and a delicate mineral note. It is a more structured, aromatic white.

Serving and pairing

Pairs well with food; no dishes are named.
