Vineyard and terroir
Once fully ripe, the red grapes stay on the vine for up to two weeks. As moisture evaporates, their sugars, flavours and aromas become more concentrated.
Vinification
The wine follows the traditional Tuscan Governo method, in which must made from grapes left to dry on the vine is added to the wine. The Sangiovese grapes are picked by hand and fermented in temperature-controlled stainless steel tanks. When this fermentation is complete, fresh must made from the partially dried red grapes is added, which starts fermentation again.
Tasting profile
Fuller-bodied, with balanced acidity and added notes of ripe, sweet berries.
