The Catarratto grows well in rocky volcanic soils rich in minerals. Sicily's climate is Mediterranean, with consistently bright sunshine and moderate rainfall that prevent rot and mold on the grapes. Coastal breezes soften temperature swings and keep the vineyards ventilated, which helps the fruit ripen well. The text states that only organic viticulture is used in Sicily, without chemicals or herbicides.
Vinification
The grapes are harvested in the early morning. A long fermentation takes place at low temperature in stainless steel tanks.
