Vineyard and terroir
The vineyards are in southwestern Sicily at 200–250 metres above sea level. The hot Sicilian sun contributes to the wine’s lively character. Constant sunshine, moderate rainfall and coastal breezes define the local Mediterranean climate; the breezes moderate temperature changes and maintain airflow through the vineyards, helping the grapes ripen while limiting rot and mould.
Vinification
The grapes are harvested by hand in the second half of September. Fermentation lasts 15 days in stainless-steel tanks at a controlled temperature.
Ageing
The wine remains on its lees in the same stainless-steel tanks until February, when it is bottled.
