Vineyard and terroir
The grapes come from the estate's own vineyards in southwestern Sicily. The climate is mild Mediterranean, and the soils are limestone and sand. The vines are trained on vertical trellises in the Guyot system. The average yield is 10,000 kg/ha.
Vinification
Harvest takes place at the very beginning of August. The must is vinified in the traditional way in temperature-controlled steel vats.
Ageing
The wine rests on its fine lees for 3 months in steel tanks before bottling. This preserves the purity, freshness and juicy character of the Vermentino.
Tasting profile
Fresh and elegant, with a light, easygoing character and a juicy fruit quality.
Label / history
The name comes from the Italian rondine, "swallow", and swallows appear on the label.
