Questo vino
Vineyard and terroir
The wine was made from estate-grown grapes cultivated in the Brunello Soldera vineyards at Case Basse in the southwestern part of Montalcino. The estate lies at 320 m on hilly, well-drained ground described as mineral-rich, relatively infertile and of volcanic origin. The first vines were planted in 1972 and 1973 on plots selected for Sangiovese.
The vineyards are worked by hand without weedkillers or other chemical products. Harvesting is entirely manual, followed by berry-by-berry selection.
Grapes
100% Sangiovese from the estate vineyards.
Vinification
Fermentation proceeds spontaneously in large vertical Slavonian oak vats through native microorganisms developing in situ, without artificial yeasts. Sensors record the must temperature every ten minutes. Daily analyses and direct observation guide the timing of manual pumping over.
Ageing
The wine matures for long periods in large Slavonian oak barrels in the underground Case Basse cellar. During maturation it is tasted regularly and analysed for chemical, physical and microbiological parameters. Racking is carried out when monitoring indicates that it is appropriate.
The cellar is 14 m underground and maintains a temperature of approximately 13 °C and 85% humidity through natural air circulation. Bottling takes place directly in the cellar. The bottled wine then rests there for several months before labelling, packing and shipment.
Serving and pairing
Serve at 17–18 °C. The wine should remain in the bottle rather than being decanted, allowing its development to be followed over the ensuing hours. A recent vintage may be opened shortly before tasting. It can accompany high-quality food prepared with similarly careful attention to its raw materials.
