Vineyard and terroir
Carrubo is made from selected grapes grown in Tenuta Carrubo’s vineyards in the countryside around Fragagnano, in the Manduria DOC area. The estate lies at approximately 120 metres above sea level and comprises 40 hectares planted with Primitivo. The soils are calcareous and characteristically red; the broader estate description also identifies clay as part of Primitivo’s natural habitat. Hot summers are moderated by pronounced day-to-night temperature changes. Historic vineyards are trained as alberello bush vines, while newer rows use vertical trellising.
Grapes
100% Primitivo. The variety’s name refers to its early ripening and its place among the first grapes harvested toward the end of August.
Vinification
The grapes are picked slightly overripe and gently crushed. Maceration on the skins is managed with gentle pump-overs at a temperature no higher than 27 °C. Malolactic fermentation takes place in stainless-steel tanks.
Ageing
The wine matures in 500-litre French-oak tonneaux, divided between new and second-fill barrels. It subsequently rests in bottle for eight months before release.
Technical data
The 2020 vintage is 16% alcohol by volume and is offered in a 750 ml bottle.
Tasting profile
Carrubo has an intense ruby-red colour with violet reflections. Its rich, complex aroma combines plum, cherry preserve and candied fruit with sweet-spice impressions of licorice, vanilla, chocolate and cinnamon. The palate is soft and generous, with elegant tannins supported by pleasant freshness. The finish is notably long, ending with the fruit-driven character typical of Primitivo.
Serving and pairing
Serve at 16–18 °C. Pair with mature cheeses, bitter chocolate, or rich and succulent meat dishes.

For 2020, the aromatic profile emphasizes plum, cherry preserve, candied fruit, licorice, vanilla, chocolate and cinnamon.
