Vineyard and terroir
The Fiano comes from a 5-hectare vineyard at Tenuta Castel Serranova in Carovigno, in the province of Brindisi. Its rows have a north–south orientation, and the vines are trained to spurred cordon. The limestone-and-clay vineyard soils are associated with the intensely red earth of the estate. Proximity to the Adriatic Sea contributes to the wine’s distinctive savory character and mineral expression. Average production is 1.8 kg per vine.
Grapes
100% Fiano.
Vinification
Harvest takes place during the first ten days of September, with the grapes picked by hand into crates. After destemming and crushing, the must receives a short pre-fermentation cryomaceration and is then gently pressed. Fermentation lasts 20 days in thermoregulated stainless-steel tanks at a controlled temperature. The wine undergoes static cold stabilization.
Ageing
The wine remains on its fine lees in stainless steel for four months, followed by three months of bottle ageing.

Tasting profile
Bright, brilliant straw yellow with pronounced green reflections. The nose is intense, persistent, and complex, combining white flowers and tropical fruit with pear, apricot, citrus, and balsamic nuances. The palate is harmonious, fresh, savory, and well structured, with a persistent aromatic finish. Elegant minerality is a defining feature.
Serving and pairing
It may be served as an aperitif or paired with raw seafood, fish-based first courses, crustaceans, molluscs, octopus, white meats, and cheeses, including mature cheeses.
Label / history
The Tenuta Serranova collection evokes the history of Castello di Serranova and its former owners, including Raimondo del Balzo Orsini, Prince of Taranto, who held the estate from 1382 to 1407, and Maria d’Enghien, Queen of Naples and Countess of Lecce, its owner from 1407 to 1464. The collection connects this historical setting and surrounding landscape with the identity of Vallone’s wines.
