Vineyard and terroir
A single-vineyard Ripasso from the 3.5 ha Tenuta di Missoj in Valpolicella, Verona, Veneto. The vineyard is situated at 200 m, faces south and has volcanic calcareous soil. The vines are Guyot trained at a density of 4,000 plants per hectare.
Grapes
80% Corvina Veronese and Corvinone Veronese, with 20% Rondinella. The finest bunches are selected and harvested by hand, with a maximum yield of 100 q/ha.
Vinification
Fresh grapes are vinified in October and macerated on their skins for 15 days. After racking, the wine remains in stainless-steel and cement tanks until January or February. In February of the following year, it referments on the fresh pomace from the newly completed Amarone fermentation, following the Ripasso method, and is then racked again.
Ageing
The wine matures for 12 months in total: 60% in large 20–30 hl Slavonian oak barrels and 40% in 225-litre French barriques made from Allier oak.
Technical data
Alcohol: 14.30% vol. Total acidity: 5.7 g/L. Residual sugar: 5.8 g/L. The technical sheet specifies a 750 ml Sophia bottle packed in cases of six.
Tasting profile
Intense ruby red with light violet reflections. The delicate, ethereal and spicy bouquet is elegantly balanced, with notes of jam, black cherry and plum. The palate is dry, harmonious and full, supported by soft, deep tannins.
Serving and pairing
Serve at 16–17 °C with red-meat dishes, braised meats, roasts, barbecued meats, game, or medium- to long-aged cheeses.
