Vineyard and terroir
A single-vineyard Amarone from the 3.5 ha Tenuta di Missoj in Valpolicella, Verona, Veneto. The vineyard lies at 200 m, faces south and has volcanic calcareous soil. The vines are Guyot trained at a density of 4,000 plants per hectare.
Grapes
70% Corvina, 20% Rondinella and 10% Croatina. The finest bunches are selected and harvested by hand in late September, once the fruit has reached full polyphenolic maturity and a high sugar concentration.
The grapes dry for approximately 110 days from late September, losing 35–40% of their weight naturally. During this period, the fruit and bunches are inspected carefully to preserve their integrity and health.
Vinification
The dried grapes are softly pressed in December or January. Temperature-controlled fermentation is followed by a long, 30-day maceration on the skins.
Ageing
The wine matures for 24 months in new 225-litre Fleur de Quintessence barriques made from very fine-grained Allier oak with medium/low toast, followed by approximately 12 months in bottle.
Technical data
Alcohol: 17% vol. Total acidity: 5.6 g/L. Residual sugar: 4 g/L. Non-reducing dry extract: 36 g/L. The technical sheet specifies a 750 ml Superbia bottle.
Tasting profile
Deep ruby red with garnet overtones. The evolved, fragrant and spicy bouquet combines ripe fruit, cherry and vanilla. The palate is intense, soft and pervasive.
Serving and pairing
Pair with game, grilled or braised meat, and fully matured cheeses. Uncork one hour before serving at 16–17 °C.
