Vineyard and terroir
The fruit comes from hillside vineyards at Tenuta Ficuzza in Piana degli Albanesi, at 700 metres above sea level. The north-east-facing vineyards are planted at 5,000 vines per hectare and yield 50 hectolitres per hectare. Medium-textured clay soils and altitude support the elegant character of Pinot Nero and the retention of acidity.
Grapes
Predominantly Pinot Nero, complemented by Chardonnay from the same estate.
Vinification
The grapes are harvested by hand into crates and pressed as whole bunches. Only the first free-run must is used, limiting tannin extraction and preserving acidity. After static settling, fermentation proceeds at low temperature. The base wine remains on fine lees for approximately six months before filtration and tirage. Secondary fermentation takes place in bottle at 13°C.
Ageing
The bottles rest in the cellar on their lees for 36 months before disgorgement.
