Vineyard and terroir
The grapes are hand-picked from Hanglagen (slope sites) in Kurtatsch. The vineyards lie at 400–800 m above sea level on limestone and gravel soils, with a planting density of 6000–7000 vines/ha. The first vines were planted in 1992.
Vinification
After 8 hours of maceration, 50% of the must is fermented in large wooden barrels. The remaining must undergoes a 14-day fermentation.
Ageing
The portion fermented in large wooden barrels is aged on the fine lees for 10 months with regular bâtonnage. The remainder spends 10 months on the fine lees in concrete vessels (25% of the total) and tonneaux (25%). The wines are then blended, and the blend matures for 2 months in concrete vats. After bottling it rests a further 5 months in the winery's cellars.
Label / history
Sauvignon Blanc belongs to Tiefenbrunner's "Turmhof" range, whose grapes come from several slopes at elevations of up to 900 m. Wines in the range spend several months on the lees in wooden barrels and are given time to mature, with attention to the sensory complexity of each variety.
