The vineyards are on hills kept warmer than the plains by a temperature inversion. The soils have a high concentration of volcanic rock. These conditions concentrate aromas and sugars in the grapes.

The best grapes are selected and vinified using traditional methods. A shortened secondary fermentation cycle contributes lightness and aromatic character.
