Vineyard and terroir
The vines are at least 30 years old and trained as small trees. Yields are very low, at no more than five bunches per vine. Puglia has a mild Mediterranean climate, with hot, very dry summers and little rainfall.
Vinification
Fermentation is followed by a long maceration.
Ageing
The wine rests for eight months in stainless-steel tanks and 12 months in large oak barrels, followed by further ageing in bottle.

Fragrant spicy aromas lead to a powerful, focused and very elegant palate with a fresh character.
