The fruit is grown exclusively in the Todi area.
Grapes
The grapes are carefully selected, with ripeness closely monitored to determine the harvest timing.
Vinification
The grapes are handled carefully on arrival at the cellar to preserve their condition before gentle pressing. The must ferments at a controlled temperature of 15–16 °C.
Ageing
The wine is aged in stainless-steel tanks.
