Vinification
The grapes are harvested between 1 and 15 October and macerated on the skins for 18–22 days.
Ageing
The wine matures for 12 months in French oak barrels, followed by a further 12 months in bottle.
Serving and pairing
Pair with pasta and other first courses with meat sauces, roasts, spicy sausages, pizza, soups, spicy cheeses, red meat or game.
