Grapes
Passerina is a very old white variety. Its name is linked to sparrows' habit of pecking at the berries.
Vinification
After sorting, the whole grapes go into Ulisse's cooling tunnel, which lowers their temperature at once and preserves the delicate fruit aromas. The skins then undergo cryomaceration to extract the aromatic compounds gently. The grapes are destemmed and softly pressed in an inert environment. The must is clarified by cold static settling, then ferments slowly at 11 °C in temperature-controlled tanks.
Ageing
The wine ages in stainless steel tanks and then spends a further three months in bottle, which makes it rounder and more balanced.
