Vineyard and terroir
The grapes for the 2011 vintage came from vineyards with vines averaging 5–10 years of age.
Grapes
Pecorino has been cultivated for generations in central Italy, particularly in Abruzzo.
Vinification
The 2011 grapes were harvested in September. Ice was placed at the bottom of each harvesting crate, and the fruit was chilled in an Enocrio cooling tunnel. The grapes were then gently pressed in an inert environment to prevent oxidation, followed by static filtration over several days. Vinification took place in stainless-steel tanks.
Ageing
The wine was aged in stainless-steel tanks.
