Vineyard and terroir

Terebinto is produced at the Ulmo winery from 100% Grillo grown in the Monte Cirami and Gurra vineyards in Menfi, Agrigento. Monte Cirami lies at 400 m above sea level on loose, well-drained soil with fine gravel and a pronounced slope; its yield is 90 q/ha. Gurra is at 35 m above sea level, with moderately deep, low-lime, highly chalky soil without structure and a yield of 80 q/ha.

The vines are planted at 4,545 plants per hectare and trained on espalier with Guyot pruning. Organic farming follows SOStain® protocols. Beans, vetch and spontaneous vegetation provide ground cover, increasing organic matter and nitrogen while supporting soil microfauna. Vine health is managed with minimal quantities of sulphur and copper, while beneficial insects, mating disruption, zeolite, kaolin and plant extracts are used to deter pests.

Grapes

100% Grillo. The variety originated in the mid-19th century through the hybridisation of Zibibbo and Catarratto.

Vinification

For the 2025 vintage, the grapes were harvested by hand from 7 August to 2 September and transported rapidly to the winery. They were crushed, destemmed and gently pressed. The must remained at approximately 2–3 °C for 4–5 days before the clear fraction was racked and fermented at around 14 °C for 18–20 days in 103 and 235 hL stainless-steel vats. The wine was racked again approximately 10 days after fermentation.

Ageing

Maturation took place in stainless steel on the finest lees, with weekly stirring. Bottling was scheduled for January 2026.

Technical data

Menfi DOC. Alcohol is 13% vol., total acidity 6.05 g/L and pH 3.20. The 0.75 L “Centopercento Sicilia” bottle weighs 410 g and is made from recycled and processed Sicilian glass. Closures may be one-piece cork, DIAM or NOMACORC. The wine is certified organic and SOStain®.

Tasting profile

Canary yellow. The aromatic profile has a tropical character, combining pineapple, white melon, rice, Granny Smith apple, prickly pear and tangerine with wisteria and jasmine. The palate is fresh and vibrant, with balance supported by the altitude of the vineyards.

Serving and pairing

Pair with raw seafood, pasta with sea urchins, fried vegetables and fish, swordfish rolls or seared tuna. It also suits white cheeses and vegetables served with pinzimonio. It may be enjoyed immediately or kept for 4–5 years.

Vintage notes

The 2025 harvest was particularly successful in the higher vineyards of Ulmo, Monte Cirami and Maroccoli. Cool soils, woodland and Mediterranean scrub helped the grapes reach complete, harmonious ripeness with a balance between quality and quantity. Grillo performed especially well.

Label / history

The first vintage was 2016. The name refers to the terebinth, a glossy-leaved shrub long associated with Sicily and Mediterranean landscapes from east to west.
