Vineyard and terroir

The grapes come from hills near Verona. The vineyards stand on mineral-rich alluvial soils and have been certified organic since 2014. Planting density is 5,000 vines per hectare, with Guyot training and a yield of approximately 7 tonnes per hectare.

Grapes

100% Corvina. Harvest begins in mid-August as the grapes reach suitable ripeness. The bunches are picked entirely by hand into crates, allowing careful control from vineyard to cellar.

Vinification

The grapes are destemmed and crushed, then vinified in stainless-steel tanks. A cold pre-fermentation maceration at a minimum of 7°C lasts at least one day. Pressing and cold static settling follow. The clear free-run must begins alcoholic fermentation at 14°C; the wine is bottled shortly before fermentation ends so that it can finish fermenting in bottle.

Ageing

The bottles are protected from sunlight and temperature fluctuations while fermentation finishes. The wine subsequently remains on its lees without disgorgement. Yeast autolysis during this period shapes its character and creates the characteristic haze.

Tasting profile

Light pink with orange reflections and a fine, pronounced perlage. The nose is expressive and spicy, complemented by pink-grapefruit citrus and small red berries. The palate is fresh and mineral, with good softness, decisive persistence and a well-judged foamy sensation.

Serving and pairing

Serve chilled as an aperitif or alongside finger food and fish starters.
