Questo vino

Vineyard and terroir

The grapes come from Monte Tenda, Monte Crosetta and Rasso, hilltop sites in the municipalities of Fumane and San Pietro in Cariano. Their soils contain abundant rock fragments. Planting density ranges from 3,000 to 5,000 vines per hectare according to vine age and training system. Guyot, double pergola and single pergola are used, with an approximate yield of 70 q/ha.

Corvina, Corvinone and Rondinella.

Vinification

Harvest takes place by hand between late September and early October. The finest portions of the bunches are selected and placed in the drying room for appassimento. Crushing and fermentation begin in January in temperature-controlled truncated-conical vessels at 14°C, with daily punch-downs.

Ageing

The wine matures for several years in large wooden casks, followed by further bottle maturation before release.

Technical data

The published 2015 release has 17.00% alcohol, total acidity of 5.95 g/L and residual sugar of 1.70 g/L.

Tasting profile

Intense garnet red with orange reflections. The elegant, concentrated bouquet combines cherries and plums preserved in alcohol with ethereal nuances and a spicy finish of chocolate, cinnamon and tobacco. The palate is balanced and dry, with elegant, soft tannins shaped by wood ageing. It remains supple and agreeable despite its substantial alcoholic strength.

Serving and pairing

Pair with chocolate or strongly flavoured, mature cheeses. It can also be enjoyed by itself as a meditation wine.

Vintage notes

The vintages presented are 2006 and 2015. The 2006 vintage received 90/100 in Decanter’s 2019 Amarone panel tasting; it was described as fully mature at that time.
