Vineyard and terroir
The fruit comes from estate-owned vineyards planted on rock-rich soils at an average density of 3,000–5,000 vines per hectare. The vineyards have been certified organic since 2014. Vines are trained to Guyot, single pergola and double pergola systems, and yields follow the denomination’s production regulations.
Grapes
Corvina, Rondinella and Corvinone.
Vinification
The grapes are harvested by hand in mid-September and destemmed before temperature-controlled alcoholic fermentation in stainless-steel vats. Once the first fermentation is complete, the young wine is placed over Amarone skins and pomace for ten days. This traditional ripasso stage produces a gentle second fermentation, increasing extract and giving the wine a more fragrant, soft and velvety palate.
Ageing
The wine matures in the estate cellar and receives several months of bottle ageing before release.

Tasting profile
Ruby red in colour. The nose is intense and elegant, combining wild cherry with a light spicy note. The palate is mineral and savoury, with persistent intensity, flavours that echo the aromatic profile and a fresh finish.
Serving and pairing
Pair with red meats and semi-hard cheeses of medium maturity.
