Vineyard and terroir
The grapes are grown on the hills of Fumane and San Pietro in Cariano, in soils rich in rock fragments. Planting density ranges from 3,000 to 5,000 vines per hectare according to vine age and training system. The vineyards use Guyot, double-pergola and single-pergola training, with a yield of 7 tonnes per hectare.

Corvina, Rondinella and Molinara, blended with Sangiovese and Cabernet Sauvignon.
Vinification
Harvest runs from early to mid-September and is carried out exclusively by hand for careful grape selection. The crushed grapes ferment in special truncated-conical tanks at a controlled temperature.
Ageing
At least 12 months in wooden barrels are followed by several months of bottle maturation in the estate cellar before release.
Technical data
For the published 2018 release: 13.00% alcohol, total acidity of 6.65 g/L and residual sugar of 0.44 g/L.
Tasting profile
Intense garnet red with a violet-red rim. Cherry leads the bouquet, followed by liquorice and mixed spices. The palate is moderately fresh, savoury and full, with a light tannic line and good persistence.

Pair with red meat and mature cheese.
