Vinification

Vinification lasts up to 20 days.

Ageing

The wine matures for five years, alternating between large oak barrels and small barrels. The use of smaller vessels is intended to bring the sweetness of the Sangiovese fruit together with a silky contribution from the wood while retaining balance and finesse. Bottle refinement lasts six months.

Technical data

Alcohol: 14.5% vol. The English product page gives annual production as 5,000 bottles, while the Italian version gives 1,000 bottles.

Tasting profile

The aromatic profile combines sweet oak, roasted coffee and bitter cocoa with lively marasca cherry and a touch of cinnamon. The palate is warm and generous, with abundant fine-grained, sweet-toned tannins and notable length. Chocolate and spice echo the aromas, while the transition from large barrels to smaller casks shapes the wine’s balance and texture.

Label / history

Maura and Michele created Penna Bianca as a further exploration of quality and as an additional expression at the top of the range. Introduced in 2024, it is the flagship wine of Vasco Sassetti. Its name recalls Vasco and the tuft of white hair he would grasp while joking that patience mattered less than allowing the grapes to reach excellent sugar concentration and alcohol potential.
