Vineyard and terroir
The fruit is grown in the Benevento area of Campania. The vineyards lie at 400–600 metres above sea level, receive full sun exposure and combine volcanic, clay and limestone soils. These conditions support freshness, concentrated flavour and bright acidity.
Grapes
Falanghina. The variety is described as semi-aromatic, combining intense, generous fruit with balanced acidity.
Vinification
The grapes undergo soft pressing, followed by static settling of the must and fermentation at 12–14°C. Lees bâtonnage is followed by cold stabilization and filtration.
Tasting profile
A medium-bodied, balanced wine of considerable intensity and persistence. Luscious fruit and measured acidity give the palate length and freshness.
Serving and pairing
Serve at 10–12°C. Pair with risotto, seafood spaghetti, herb-seasoned chicken, savoury pies or fish main courses.
