Questo vino
Vineyard and terroir
The Chardonnay comes from the Montagliari vineyard in Panzano in Chianti. Its predominantly clay-rich soil lies at 350 metres above sea level, with a north-eastern exposure in an open, bright and well-ventilated position. The yield is 40 hl/ha.
Grapes
100% Chardonnay.
Vinification
The grapes are harvested by hand at the beginning of September, selected and gently pressed. Part of the crop receives a short cold maceration on the skins, while the rest is vinified directly as a white wine. The free-run must ferments off the skins in stainless steel at a controlled 15°C. Malolactic fermentation is avoided to preserve freshness and acidity.
Ageing
The wine remains on its fine lees for three months at 18°C, followed by at least one month in bottle.
