Vineyard and terroir
The fruit comes from Vignamaggio’s estate vineyards.
Grapes
50% Sangiovese and 50% Pinot Bianco, vinified as a rosé base wine.
Vinification
The grapes are harvested by hand at the beginning of September and gently pressed. The must undergoes alcoholic fermentation off the skins in stainless steel at 18–20°C. Tirage takes place in spring, initiating the second fermentation in bottle according to the classic method.
Ageing
The wine spends two years on its lees. The inclined bottles are then disgorged, removing the yeast sediment collected in the neck. After the liqueur d’expédition is added, each bottle is sealed with a mushroom cork and wire cage.
Technical data
Extra Brut, with residual sugar no higher than 6 g/L. Alcohol: 12.5% vol. Production: 5,000 bottles. Format: 750 ml.
Tasting profile
Bright powder pink with a fine, persistent perlage. Fragrant bread notes mingle with nutty nuances on the nose. The palate is dry, fruity, balanced, fresh, lively and savoury, with good persistence.
Serving and pairing
Serve at 8–10°C. Designed to accompany celebratory meals from the aperitif through to the final toast.
Label / history
Vignamante is conceived as an ode to parties and festive occasions. Its name combines the bubbles of spumante with the soul of the estate.
