Vineyard and terroir
The Sauvignon Blanc grows in vineyards with stony soil on a mineral-rich river floodplain.
Vinification
The grapes are harvested late; the name "Tardo" means "late" in Italian. They stay on the vine longer than usual so that aromas and flavours develop greater concentration. Whole grapes are gently pressed in a pneumatic press, and the free-run juice is fermented in steel tanks under strict temperature control.
Ageing
The wine ages on fine lees in stainless steel tanks for several months before bottling.
Serving and pairing
It can be drunk as soon as it is released or kept for 2–3 years.
Label / history
The name "Tardo" refers to the late harvest.
