Vineyard and terroir
The fruit comes from the Chronicon Vineyard in the Casauria Valley. The medium-textured soils tend toward clay and face west. The valley is distinguished by constant ventilation throughout the year and strong temperature differences between day and night. The vines are trained to pergola and espalier.
Grapes
Passerina.
Vinification
Selected Passerina grapes are crushed and pressed in an oxygen-free environment to preserve their character. The must is cold-settled for approximately seven days near 0°C, a treatment that helps retain the variety’s fragrant fruit notes. Temperature-controlled fermentation lasts ten days.
Ageing
The wine matures in steel tanks on its own fine lees until bottling.
Technical data
Alcohol: 12.5% vol, with possible variation between vintages. Available format: 0.75 L. Harvest takes place in August.
Tasting profile
Bright straw yellow with golden highlights. White flowers mingle with ripe yellow-fleshed and tropical fruit, accented by sweet spices. Fine freshness and savoury character bring energy and dynamic movement to the palate.
Serving and pairing
Serve at 8–10°C in a tulip glass. Pair with delicate fish, shellfish, vegetarian dishes and fresh cheeses.
Label / history
The Chronicon line and labels take their inspiration from the Chronicon Casauriense, the medieval chronicles of the Abbey of San Clemente a Casauria. The monk Giovanni di Berardo compiled the work, whose illustrations and pen drawings survive in the manuscript now held by the National Library of France in Paris.
