Vineyard and terroir
The grapes grow in the Chronicon Vineyard in the Casauria Valley. The medium-textured soils tend toward clay and have a western exposure. Constant year-round ventilation and marked temperature variation between day and night favour the wine’s floral and fruit expression. The vines are trained to pergola and espalier.
Grapes
Pecorino d’Abruzzo.
Vinification
Selected Pecorino grapes are processed in an oxygen-free environment to preserve their character. The must undergoes seven days of cold settling at 0°C, followed by ten days of temperature-controlled fermentation.
Ageing
The wine matures in steel on its own yeasts until bottling.
Technical data
Alcohol: 13% vol, with possible variation between vintages. Available format: 0.75 L. The grapes are harvested in August.
Tasting profile
Brilliant straw yellow of medium intensity. White flowers and crisp pear define the aromatic profile. The body is lean and agile, with freshness and savoury tension shaping the palate.
Serving and pairing
Serve at 8–10°C in a tulip glass. Pair with risottos, pasta and other first courses, fish soups and vegetarian recipes.
Label / history
The line and its labels draw inspiration from the Chronicon Casauriense, a collection of medieval chronicles concerning the Abbey of San Clemente a Casauria. Compiled by the monk Giovanni di Berardo and embellished with fine illustrations and pen drawings, the manuscript is preserved in the National Library of France in Paris.
