Vineyard and terroir
The fruit comes from estate vineyards, mainly in Veneto, with several plots in Friuli-Venezia Giulia. The vineyards lie at 60–120 m above sea level on clay soils with gravel deposits near rivers.
Grapes
Glera is blended with a small proportion of Pinot Noir, limited to no more than 15%.
Vinification
Glera is harvested mechanically and transported quickly to the winery to preserve freshness. The grapes are destemmed and gently pressed; the must is then chilled and settled before inoculation with selected yeasts. Alcoholic fermentation lasts 10–12 days, with Glera fermenting at a controlled 17–18 °C. Pinot Noir receives six hours of maceration and ferments at 21–22 °C for 15 days. The base wines are blended in stainless-steel tanks. Secondary fermentation takes place at 15 °C in sealed autoclaves using the Charmat method. The wine is filtered before bottling for clarity.
Ageing
The sparkling wine rests on its lees for approximately two months.
