Vineyard and terroir
The fruit is selected from vineyards in San Benedetto, south of Lake Garda, in one of the denomination’s historic, well-suited areas. The vines are 20–30 years old and grow at 60–80 m above sea level.
Vinification
The grapes are harvested by hand between the final ten days of September and the first ten days of October. After gentle pressing, the juice ferments in stainless-steel tanks for 15–20 days at a controlled temperature of 16–18 °C.
Ageing
The wine rests for 4–5 months in stainless-steel tanks, followed by 2–3 months in bottle.
