Vineyard and terroir
The fruit comes from Azienda Agricola Zidarich’s own vineyards in Duino, Aurizina, Loc. Prepotto and Trieste. The vines are 6–30 years old and are planted at 260–280 m above sea level on southeast-facing slopes. The red soils are rich in karst limestone, and planting density ranges from 7,000 to 10,000 vines per hectare.
Vinification
The grapes are harvested by hand into small boxes, then destemmed and crushed. Fermentation takes place in open vats in contact with the skins, using natural yeast and without temperature control. The cap is punched down daily. Malolactic fermentation takes place in large oak barrels. The wine is neither stabilised nor filtered before bottling.
Ageing
The wine matures for two years in large and medium-sized Slavonian oak barrels, followed by a further two years in bottle before release.
