Vineyard and terroir
The grapes are grown in Azienda Agricola Zidarich’s own vineyards in the municipalities of Duino, Aurizina, Loc. Prepotto, and Trieste. The vines are 6–30 years old and planted at 260–280 m above sea level with southeastern exposure. The red soils contain a high concentration of karst limestone. Planting density is 7,000–10,000 vines per hectare.
Grapes
The blend comprises 60% Sauvignon Blanc, 20% Malvasia, and 20% Vitovska.
Vinification
The grapes are harvested by hand from the final days of September through the first ten days of October. The bunches are collected in small containers and transported to the winery in them. After destemming, the grapes are crushed and fermented in open vats on the skins with natural yeasts, without temperature control, and with daily punch-downs. Malolactic fermentation takes place in large oak barrels. The wine is neither stabilized nor filtered before bottling.
Ageing
The wine matures for two years in large and medium-sized Slavonian and French oak barrels, followed by another two years in bottle before release.
