Vineyard and terroir
The grapes come from Azienda Agricola Zidarich’s own vineyards in the municipalities of Duino, Aurizina, Loc. Prepotto and Trieste. The vines are 6–30 years old and grow at 260–280 m above sea level, with southeast-facing exposure. The red soils are rich in karst limestone, and planting density is 8,000–10,000 vines per hectare.
Vinification
The grapes are harvested by hand from the last week of September through the first ten days of October and transported to the winery in small containers. After destemming and crushing, fermentation takes place in open vats in contact with the skins, using natural yeasts, without temperature control and with daily punch-downs. Malolactic fermentation occurs in large oak barrels. The wine is neither stabilized nor filtered before bottling.
Ageing
The wine matures for 24 months in large and medium-sized Slavonian oak barrels. After bottling, it usually rests for a further two years in the estate’s cellars before release.
