Vineyard and terroir
The grapes come from organic vineyards in Veneto, on alluvial soils of limestone and clay that give a distinct mineral character.
Grapes
The blend is made of Rondinella Bianca, Traminer, Kerner and Incrocio Manzoni.
Vinification
Harvest takes place in the second half of September, once the grapes reach ideal ripeness. They are gently pressed and destemmed, then cryomacerated for 24 hours at a low temperature, which preserves freshness and floral and citrus aromas and gives a light structure. Fermentation runs for 20 days at a controlled temperature.
Ageing
Six months on the lees in concrete tanks with regular bâtonnage, which adds richness, a silky texture and lively minerality and reveals the depth of each variety in the blend.
Tasting profile
Delicate and refreshing, light and fresh. The nose offers white flowers, green apple and delicate citrus fruit, with a touch of fresh minerality.

Pairs with pasta or seafood salad.
Label / history
The Zyme name comes from the Ancient Greek word for "yeast". The pentagonal logo stands for five elements of winemaking: people, vines, earth, sun and water. Celestino Gaspari founded the winery and officially began producing wine in 2003. He gained his experience at the Quintarelli winery, run by his future father-in-law Giuseppe Quintarelli, before establishing his own winery in the heart of Valpolicella Classico. The winery has a modern building where vinification takes place and a cellar carved into a sandstone wall.
