Vineyard and terroir

The fruit is harvested from vines up to 40 years old. Kairos and Harlequin draw on the same plots.

Grapes

The blend also includes Teroldego, Petit Verdot, Garganega, Trebbiano Toscano, Chardonnay and Sauvignon Blanc. Its proportions change each year according to the quality of each variety in that vintage.

Vinification

All grapes are harvested by hand, with each variety picked when it reaches ripeness. Vinification takes place in steel and cement vessels. Cryomaceration and fermentation with native yeasts last 20–25 days. During this period, work on the must and pomace is performed by hand.

Ageing

The wine ages in French oak barriques for at least two years without racking, followed by at least six months in bottle.

Vintage notes

In 2019, spring was cool and rainy, particularly in April and May, when temperatures were the lowest recorded for that period in 30 years. A very hot summer followed, with temperatures reaching 38 °C in late June and July. Heavy rain and hail occurred in July and August, and temperatures returned to normal only in early August. The harvest ended one week later than in 2018, and many varieties retained excellent acidity.

Label / history

Celestino Gaspari created Kairos to unite winemaking tradition with new possibilities. It is produced every year, while Harlequin uses grapes from the same plots in years with better weather conditions. The name comes from ancient Greek and means “favourable” or “timely,” referring to the importance of choosing the right moment in winemaking.
