Vineyard and terroir
The fruit comes from the rolling hills of Colli Berici, near Lonigo in the province of Vicenza. Warm, sunny days and cool nights promote freshness, richness and gentle elegance. The vines receive organic fertilizer and are hand-pruned and shoot-thinned to concentrate their energy on the fruit.
Vinification
The grapes are harvested entirely by hand, bunch by bunch, during the final weeks of September, with selection limited to the ripest, healthiest berries. They are air-dried for 20–30 days to increase concentration and body while retaining the variety's natural character. Fermentation with wild yeasts takes place in concrete tanks over 40 days.
Ageing
The wine matures in new barriques for at least 48 months, followed by one year in bottle. This develops harmony, depth and a finely shaped structure.

Label / history
The label depicts a warrior and winemaker whose bold yet gentle, vibrant character evokes that of the wine. The image represents the creator's courage, connection to the land and regard for her roots.
“Zyme” means “yeast” in Ancient Greek. The winery's pentagonal logo represents five elements of winemaking: people, vines, land, sun and water. Celestino Gaspari founded the winery and officially began producing wine in 2003, following an interest in winemaking that began in early childhood. He acquired knowledge and experience at Giuseppe Quintarelli's winery after meeting the winemaker, who later became his father-in-law, before establishing Zyme in the heart of Valpolicella Classico. The winery comprises a modern vinification building and a cellar carved into a sandstone wall.
