About this wine
Vineyard and terroir
Selected Lagrein fruit comes from the abbey’s vineyards at 260 m above sea level. The abbey sources its red grapes from warmer vineyards farther south in Bolzano.
Grapes
The grapes are selected before vinification.
Vinification
Harvest begins in mid-October. Fermentation takes place for two months in stainless-steel tanks at a controlled 28 °C, using only natural yeasts.
Ageing
The wine matures for six months in oak barrels in the monastery cellars.
