Technical data, vinification, ageing and tasting profile
Very early manual harvest in the last fifteen days of August. Whole grapes are pressed under protection from oxygen using dry ice. After static settling, fermentation takes place at 14–15°C. The base wine ages for 4 months in barriques. Tirage occurs in spring; prise de mousse lasts 20–25 days in bottle at 16°C. The wine spends at least 18 months sur lattes, with coup de poignet every two months, then is disgorged, receives liqueur d’expédition and ages another month. Approximately 2,500 bottles and 250 magnums; yield 10 t/ha. Alcohol 12.5% vol; dry extract 18–19 g/L; total acidity 8.5–9 g/L. Rose-petal colour, fine abundant perlage, raspberry, forest fruit, rose and toasted notes, with mineral balance and a savoury persistent finish.
