Technical data, vinification, ageing and tasting profile
Hand-harvested in the second or third ten-day period of October. Grapes are destemmed and gently pressed, then macerate for 10–12 days at controlled temperature in stainless steel. Alcoholic and malolactic fermentation finish in steel. The wine then ages successively in large oak casks and small barriques for approximately 18–20 months, followed by at least 6–8 months in bottle without filtration. Approximately 10,000 bottles; yield 70 q/ha. Alcohol 14–14.5% vol; dry extract 27–29 g/L; total acidity 5.5–5.7 g/L. Deep carmine, with floral, fruit and balsamic aromas, savoury freshness, elegant tannins and a refined persistent finish.
