Technical data, vinification, ageing and tasting profile
Grapes are harvested by hand at the beginning of September and placed in perforated crates. After 24–36 hours of maceration at 18–20°C, the free-run must is separated and fermented off skins. The wine ages for about 3 months in temperature-controlled steel at no more than 18°C, is bottled without filtration and receives at least 2 months in bottle. Approximately 1,300 bottles. Alcohol 12.5–13.5% vol; dry extract 22–25 g/L; total acidity 5.3–5.8 g/L. Dull cherry red, with lively persistent fruit, freshness, body and a savoury finish.
