About this wine
Vineyard and terroir
The Catarratto is grown in Sicily on soils rich in limestone and clay, farmed according to organic principles. The vineyards belong to Aldo Viola, so the producer controls the grapes fully.
Vinification
The wine is made following biodynamic principles. The grapes are harvested by hand, sorted and gently destemmed, then fermented and macerated on the skins in stainless steel tanks. The process lasts 5 months. The wine is bottled unfiltered with minimal added sulfites.
Tasting profile
Harmonious yet complex, rich yet fresh. Bright citrus nuances and wild herb notes, with a distinctive mineral character.
