About this wine
Vineyard and terroir
The 2 ha vineyard is in Sicily and is farmed biodynamically. Its limestone soils contribute minerality and freshness.
Vinification
The grapes are harvested by hand at optimal ripeness and pressed very gently, yielding essentially free-run juice. Spontaneous fermentation with native yeasts is followed by two weeks of maceration in stainless-steel tanks. The wine is bottled without filtration and with minimal added sulfites.
Ageing
The wine matures for nine months in large, old oak barrels, followed by two months in bottle.
