About this wine

Vineyard and terroir

The production area encompasses Mogoro and its surroundings in the province of Oristano.

Grapes

Vermentino.

Vinification

A short period of skin contact precedes vinification. Oxygen exposure is avoided to protect the grapes’ aromatic character, and fermentation takes place at controlled temperature with selected yeasts.

Ageing

The wine undergoes bâtonnage in stainless-steel tanks for 40 days.

Tasting profile

Bright straw yellow with greenish highlights. The aromatic progression moves from rosemary, characteristic of the variety, through elderflower to white- and yellow-fleshed fruit and lychee. The palate opens softly before becoming savoury and lively, with good structure and a well-integrated alcoholic presence.

Serving and pairing

Serve at 10–12 °C. Suitable as an aperitif with cheese puffs or Sardinian ham, and with fresh bottarga, savoury vegetable pies, shellfish, seafood and flavourful cooked or grilled fish of moderate richness. It also pairs with pecorino and semi-hard cow’s-milk cheeses.
