About this wine
Vineyard and terroir
The Carricante comes from an east-facing, terraced vineyard in Contrada Rinazzo, within the territory of Milo on Mount Etna’s eastern slope. At approximately 800 metres above sea level, the site faces the Ionian Sea and combines abundant light with continuous ventilation. Winters are humid, rainy and snowy, while pronounced day-to-night temperature changes characterize the mountain climate.
The mineral-rich volcanic sand has a sub-acid reaction and a soil pH of 6.5. Young vines are head-trained and short-pruned in the traditional alberello form, supported by chestnut poles and planted on small terraces retained by dry lava-stone walls. Planting density is approximately 8,000 vines per hectare, with yields around 6,500 kilograms per hectare.
Grapes
100% Carricante. The variety has medium-sized berries with heavily bloomed green-yellow skins and medium-length, loosely packed bunches.
Vinification
The grapes are picked by hand after mid-October, destemmed and gently pressed. Fermentation proceeds for approximately 12 days in stainless-steel vats at about 18°C, using a selected indigenous Etna yeast.
Ageing
The wine matures for approximately 12 months in stainless steel on its fine lees, with frequent stirring, followed by six months in bottle before release.
