About this wine
Vineyard and terroir
Allemanda comes from the Agliastro vineyard at the Buonivini estate in Noto (SR), 40 m above sea level. The soil consists of calcareous marl with abundant small-sized stony material, a fine texture and areas of pale chalk. Planting density is 5,050 vines per hectare, and the reported yield for 2025 is 90 quintals per hectare. The vines are espalier-trained and Guyot-pruned.
Cultivation follows organic-farming criteria and SOStain® protocols. Broad beans, vetch and spontaneous flora cover the ground to add organic matter and nitrogen and encourage soil microfauna. Plant protection uses small quantities of sulphur and copper, beneficial insects, mating disruption and natural treatments including zeolite, kaolin and plant extracts. The wine carries Organic Wine and SOStain® certifications, together with the designation 10.1 B.
Grapes
100% Moscato Bianco.
Vinification
For the 2025 vintage, the grapes were harvested by hand into crates between 10 and 21 August. They were chilled overnight at approximately 8–10 °C, selected by hand, destemmed and pressed. The must remained at approximately 7–8 °C for three to four days; the clear fraction was then racked and fermented at approximately 15 °C for 20–25 days in stainless-steel tanks of 100 and 195 hL.
Ageing
After fermentation and a further racking, the wine remained on its finest lees with weekly stirring for approximately four months. It was packaged in 0.75 L bottles weighing 440 g and closed with Stelvin® Deluxe.

Tasting profile
The 2025 wine is very pale yellow with green highlights. Its aromas include jasmine, rose petals, mandarin, pink grapefruit, orange blossom and neroli, maritime notes and an almost vanilla-like nuance. It is full-bodied yet lean on the palate, with softness supported by subtle acidity. The broader profile is fresh, fruity, balanced and elegant.
Serving and pairing
Designed as an aperitif and best enjoyed young. Pair it with Noto almonds, Nocellara del Belice olives, Vastedda, mozzarella, raw fish—including Asian-style preparations—fish-based first courses, and vegetable or fish couscous.
Vintage notes
The 2025 crop was composed of healthy grapes and delivered average production, approximately 25% above the exceptionally small 2024 harvest. Quality was very high. Spring storms near the sea brought additional rain to Noto, while a summer without excessive heat enabled an early Moscato harvest. The resulting wines are characterised as intense and typical of Noto, although the vintage assessment remained preliminary when the sheet was prepared.
Label / history
The name refers to the allemande, a Baroque opening dance. The same idea informs the wine’s role as an opening aperitif: an aromatic but dry interpretation of Moscato Bianco.
