About this wine
Vineyard and terroir
Prasià comes from a 1-hectare vineyard at Rosolini in the province of Syracuse. The site lies at an average elevation of 60 m above sea level and faces south-east. Its deep, fertile soils consist of silt and clay and shelter the grape bunches from the sun, supporting a more complex ripening process.
The vines are eight years old and planted at a density of 5,500 vines per hectare. They are Guyot-trained and pruned, with an average yield of 1.5 kg per vine.
Grapes
Moscato di Noto.
Vinification
The grapes are harvested in August. Maceration lasts about five days, or 120 hours. Alcoholic fermentation is followed by spontaneous malolactic fermentation.
Ageing
The wine matures for 6–8 months in a concrete tank and subsequently continues ageing in bottle.
Technical data
Annual production is approximately 3,000 bottles.
Tasting profile
Golden yellow in colour. The varietally expressive, aromatic nose combines white fruit, peach, citrus and candied fruit with small white and yellow flowers and broom. The palate is fresh, savoury, mineral and harmonious.
Serving and pairing
Serve at 13 °C. Pair with raw fish, prawns, scampi, spaghetti with sea urchins, or cheese with raisins.
Label / history
The name Prasià derives from the Sicilian term for an orta in ancient Greek: a plot traditionally devoted to growing vegetables for household use by residents of the nearby town.
